For the Pesto
- 300g of Pfifferlinge
- 1 large onion
- 3 garlic cloves
- 2 tablespoons of butter
- 60g of pinecone nuts
- 120g of hard Bergkäse
- 40g parsley
- 150ml of olive oil
Start by finely chopping the onion & garlic. Then chop the Pfifferlinge. Add the butter to a pan and sautée the onions, garlic, and mushrooms until no more liquid remains. Let cool.
Roast the pinecone nuts on a skillet. Let cool.
Add everything to a food processor, along with the cheese, parsley, and olive oil. Finely purée. Add the remaining olive oil and mix well. How easy was that! This is a great option for a weekday meal or make enough and store!
